You are doing this keto thang.
You’re doing really well.
And then, BOOM!
Out of nowhere you have one of those days.
The ones where everything goes wrong at work, Johnny left his trumpet on the bus, Suzy’s new BFF totally turned out to be a jerk, and the dog ate his new crate…
Now everyone is tired and cranky and hangry!
What’s a keto mom to do??
I would like to introduce you to my new BFF…(and I promise this one won’t turn out to be a jerk!)…
The Instant Pot!
Do you have an Instant Pot?
Do you know what an Instant Pot is?
I didn’t until about 6 months ago…
So unless you’ve been living under a bigger rock than I have, you know that the Instant Pot is an electronic, programmable, pressure cooker.
Now, I don’t know about you, but I tend to be the opposite of an “early adopter”.
In fact, I probably wouldn’t have a smart phone if I hadn’t lost my old flip phone. Which totally mortified my kids when ever I would pull it out in public…
Let us pause for a moment and just savor the sweetness that payback brings…lol
Come to think of it, I wonder of one of the kids “lost” it for me.
Anyway, I finally broke down and got this Instant Pot from Amazon.
Stuff just got real, y’all.
On some models you can even tell it when you want it to be done and it starts on its own.
Holy dinnertime, Batman!
Where have you been all my dinner making life??
After I got it, of course, I scoured the internet for Keto friendly recipes to make in it. I was really surprised at the ginormous list of Keto Instant Pot recipes that I ended up with.
In the interests of you not having to waste time doing all the research yourself, I’ve put together a list of all of my favorite recipes using this amazing machine.
I think it’s safe to say that the Instant Pot has revolutionized dinner time for Moms everywhere.
And non-moms…
and single people…
and empty-nesters…
and everyone else that doesn’t fit into any neat categories…
Which makes following a ketogenic lifestyle easier than ever! Hooray!!
Now we really have no excuse to hit that drive through on the way home.
Sorry not sorry!
But you’re welcome.
These Keto Instant Pot recipes run the gamut from breakfast to dessert and everywhere in between. These are here in no particular order. I just added them as I thought about which ones we've liked. Add some of these to your weekly meal plan, and make doing keto a breeze! Bone broth is such a nutritious start to all your soups, stews, sauces, and gravies. So that's why it has the place of honor at #1 on this list. Make big batches of bone broth and can or freeze it so you always have it on hand. This beef stew is flavorful and nourishing and perfect for those rainy evenings. There are a small amount of carrots that you can totally leave out to lower the carb count. Turtle Cheesecake. Keto Turtle cheesecake. In the Instant Pot. Need I say more? These egg bites are a fun and easy way to start the day. You can even make these up ahead of time and reheat. I like to sub heavy cream for the nut milk and add some sharp cheddar. Because I think everything is better with cheese. lol Here's another egg bites recipe. This one uses Gruyere cheese (yum) and some cottage cheese as well. Love egg bites so much! If you grew up in the Southwest like I did, there are 2 camps when it comes to chili. Beans or no beans. There is no middle ground. It is a passionately debated topic. I've always been in the beans camp, myself, and I have missed chili since starting my keto journey. This chili recipe almost made me turn in my "chili isn't chili without beans" card. Almost. Luscious, delicious meatballs in tomato sauce. Perfect for serving with spaghetti squash "noodles". In fact, you can even toss the spaghetti squash in the Instant Pot at the same time. Ish. Same time ish. Continue reading further down and there is a recipe with instructions on how to do that. Roasting a whole chicken was one of my Sunday dinner go-tos most of my adult life. Sunday, because I had to be home to watch it. Through the magic of the Instant Pot, you can now have a whole roasted chicken any night of the week. Serve this baby with one of the Cauliflower puree recipes that I've included. Your family will love you for it! Ah, meatloaf! One of the comfort foods from my childhood. This is a great Keto version. I have to admit, though, that I'm a don't-put-ketchup-on-top-of-my-meatloaf kinda girl. I usually serve the sauce on the side for those that want it. If you've never had butter chicken, you are in for a treat! This recipe with its Garam Masala seasoning, is a taste bud trip to India. Serve with riced or mashed cauliflower for the perfect keto dish. And now we are going to take our taste buds to France. With just the right amount of Herbes de Provence, this chicken is garlicky, herby, heaven! The awesome sauce is wonderful served over pureed cauliflower. You're gonna love it. Here's another vegetable beef stew that we love. Isn't it cool how many variations of soups and stews there are? Something for everyone. This recipe, my friends, is a game changer. I LOVE carrot cake. But I thought I would have to give that up for Keto. Not so! This recipe has a smaller amount of carrots, but the same amount of flavor as a non-keto carrot cake. And it's better for me. Win-win! If you want something a little bit fancy to serve to guests, this recipe is just the thing! With artichokes and sun dried tomatoes, you can serve up a restaurant style meal to your family or guests in practically no time at all! There is just something so down to earth and homey about a cabbage and sausage dish. The smoked sausage used here gives it a great depth of flavor that I just love. I LOVE beef and broccoli. This version doesn't have any MSG, which is something I've become sensitive to. And I really don't miss the rice. You could serve over riced cauliflower if you wanted to, though! Smothered pork chops. That just shouts comfort food to me. And these chops are juicy and flavorful and covered with bacon and mushrooms in a creamy sauce. They are simply amazing! Another flavor burst from India, this roasted cauliflower is a perfect accompaniment to the Butter Chicken. Seriously, you've never had cauliflower this good! I am happy beyond words that I still get to eat BBQ sauce on the keto diet! And these pork chops really hit the spot when I get a hankerin' for some really good BBQ sauce! Who doesn't love buffalo chicken? This low carb recipe is perfect. And as a bonus, it includes how to cook spaghetti squash in the instant pot as well. At the same time. Awesomeness! Mexican food is my kryptonite. But this is low carb y'all! Stuff this pork into lettuce leaves or a low carb tortilla. Pile on the pico de gallo and sour cream, and squeeze some lime juice over it. Taste bud heaven! Pot Roast always brings back dinner time memories for me. The whole family around the table, enjoying the food and conversation. You will love this version with low carb gravy that you can pour over everything including the cauliflower mash. Another comfort food favorite! Here is an amazing cauliflower mash to go with that roast recipe. Actually, this stuff is so good I like to eat it all by itself. Bacon, cheese, and sour cream make this some serious comfort food for me. Perfect for a rainy evening while streaming Netflix. This is another awesome mashed potato substitute! Serve this with pretty much any of the other recipes. It's a perfect landing spot for all the gravies and sauces in these recipes. You won't miss potatoes at all. I promise. This tomato soup is creamy and delicious. Everything I want in a soup. Serve it by itself or with a low carb grilled cheese sandwich.Keto Instant Pot Recipes
