“What’s for dinner?”

You breath a huge sigh of relief. The night is saved!

Ok. Maybe a little over dramatic.

Keto Chicken Bacon Ranch Casserole

I love an easy, tasty casserole dish that you can throw together from leftovers!

And really, you just can’t go wrong with chicken, bacon, and ranch! And this particular Keto Chicken Bacon Ranch Casserole recipe is the best of the best!

This is also a great meal prep dinner. If everything is cooked ahead of time it goes together fast enough to be on the table in 30 minutes or less. And 20 minutes of that time it’s in the oven.

If you want to make it a little more filling, you can serve it over cauliflower rice or spaghetti squash noodles.

We like it with just a crispy green salad with a little more ranch dressing. Cuz more is more with ranch. Amiright?

You can always use a prepackaged ranch but homemade Keto Friendly Ranch Dressing is absolutely the best way to go.

It even lowers the carb count.

But, either way, this Bacon Cheddar Ranch Casserole is one of our favorite keto recipes.

Keto Chicken Bacon Ranch Casserole

Casserole

  • 2 Tbsp butter OR bacon grease if you’ve just fried the bacon (I think that actually makes it better)
  • 1 1/2 Tbsp homemade Keto Ranch Dressing Mix OR store bought
  • 4 oz cream cheese, softened
  • 1/4 c heavy cream
  • 2/3 c chicken broth
  • 1/4 c crumbled bacon (approx. 4 slices)
  • 1/2 c shredded cheddar cheese
  • 2 c chopped broccoli (fresh or cooked)
  • 2 c shredded cooked chicken

Topping

  • 1 1/2 c shredded cheddar cheese
  • 1/2 c crumbled bacon (approx. 8 slices)

Notes for meal prepping: 1. Cook and shred chicken (2 cups), 2. Chop broccoli (fresh or cooked, 2 cups), 3. Cook and crumble bacon (12 slices total)

First thing you need to do is preheat your oven to 350°F.

If you have an oven safe skillet, like my favorite cast iron one you see in the pictures, you can do all of this in one pan. If you don’t, you’ll need to oil a casserole dish for later.

Melt the bacon grease or butter in the skillet over medium heat.

Once that’s melted, reduce the heat to medium low and add the heavy cream, the broth, and the cream cheese.

Whisk that up until the cream cheese has melted and the sauce is smooth.

Now toss in the cheddar cheese and the ranch mix. Give it another good whisking.

You should taste it now. You’re not gonna believe how amazing this stuff tastes…

Now stir in the bacon pieces. And add the chicken and broccoli and stir it in until it’s well combined.

You’ll think that there’s not enough sauce, but it’s gonna be fine. Trust me.

Now’s the time to transfer it to a casserole dish if your skillet can’t go into the oven.

Cuz it’s time to top this stuff off and get it into the oven.

So sprinkle the cheese over the top. And then the rest of the crumbled bacon.

Put it in the preheated oven and cook for about 20 minutes. It should be all bubbly and melted cheesy.

You can put it under the broiler for a few minutes if you want a little bit of color on the top.

Serve it with a crispy green salad to round it out a little.

And if you want to stretch it a little you can serve it over cauliflower rice or spaghetti squash noodles.
