Ingredients
Casserole
2Tbspbutter OR bacon grease if you've just fried the baconI think that actually makes it better
1 1/2Tbsphomemade Keto Ranch Dressing Mix OR store bought
4ozcream cheesesoftened
1/4cheavy cream
2/3cchicken broth
1/4ccrumbled baconapprox. 4 slices
1/2cshredded cheddar cheese
2cchopped broccolifresh or cooked
2cshredded cooked chicken
Topping
1 1/2cshredded cheddar cheese
1/2ccrumbled baconapprox. 8 slices
Instructions
First thing you need to do is preheat your oven to 350°F.
If you have an oven safe skillet you can do all of this in one pan. If you don't, you'll need to oil a casserole dish for later.
Melt the bacon grease or butter in the skillet over medium heat.
Once that's melted, reduce the heat to medium low and add the heavy cream, the broth, and the cream cheese.
Whisk that up until the cream cheese has melted and the sauce is smooth.
Now toss in the cheddar cheese and the ranch mix. Give it another good whisking.
Now stir in the bacon pieces. And add the chicken and broccoli and stir it in until it's well combined. You'll think that there's not enough sauce, but it's gonna be fine. Trust me.
Now's the time to transfer it to a casserole dish if your skillet can't go into the oven.
Now sprinkle the cheese over the top. And then the rest of the crumbles bacon.
Put it in the preheated oven and cook for about 20 minutes. It should be all bubbly and melted cheesy.
You can put it under the broiler for a few minutes if you want a little bit of color on the top.
Serve warm.

Serve it with a crispy green salad to round it out a little.And if you want to stretch it a little you can serve it over cauliflower rice or spaghetti squash noodles.
