Ingredients
2Tbspbutter
2clovesgarlicminced
1 1/2tspchicken bouillon
1/8tspnutmeg
1 1/2cheavy cream
4ozcream cheesecut into cubes
1/2cParmesan cheeseshredded
1cchickencooked and cut into cubes
1cbroccolicut in bite sized pieces
2 1/2cspaghetti squashcooked
salt & pepper to taste
parsley for garnish
Instructions
Melt the butter in a heavy bottomed skillet over medium heat.
Add garlic and nutmeg and cook for a minute or two.
Pour in heavy cream and the chicken bouillon and whisk well.
Carefully add the cream cheese and the Parmesan cheese. Continue to whisk until the cheese is melted and the sauce is smooth.
Add the chicken and cook until the chicken is heated.
Adjust seasonings to taste.
Add the spaghetti squash and mix well. Continue to cook until the squash is heated through.
Notes
This is great served with just a salad. You can serve the broccoli on the side lightly steamed instead of in the dish.
